Slow Cooker Chicken & Beans

Slow Cooker Chicken & Beans
Description
This Slow Cooker Chicken & Beans recipe is an easy, hearty, and comforting dinner made with tender chicken breasts, creamy pinto beans, tangy barbecue sauce, and flavorful ranch seasoning. Everything cooks together in the slow cooker, creating a rich, saucy meal with minimal hands-on preparation. It’s perfect for busy weeknights, meal prep, or a cozy family dinner.

Ingredients
3–4 boneless, skinless chicken breasts
2 cans (15 oz each) pinto beans, drained and rinsed
1 packet ranch seasoning mix
1 cup barbecue sauce
Directions
Add the beans: Place the drained and rinsed pinto beans evenly across the bottom of the slow cooker.
Add the chicken: Arrange the chicken breasts on top of the beans.
Season: Sprinkle the ranch seasoning mix evenly over the chicken and beans.
Add barbecue sauce: Pour the barbecue sauce over everything, spreading it as evenly as possible.
Slow cook: Cover and cook on LOW for 6–8 hours, or until the chicken is very tender and reaches an internal temperature of 165°F (74°C).
Shred the chicken: Carefully remove or shred the chicken directly in the slow cooker. Gently stir some of the barbecue sauce and beans into the shredded chicken.
Serve: Spoon plenty of the saucy beans over the chicken and serve hot.
Recipe Notes
Chicken: Boneless, skinless chicken breasts work well, but boneless chicken thighs can be substituted for a richer result.
Beans: Pinto beans provide a creamy texture and mild flavor. Black or kidney beans can also be used.
Barbecue sauce: Use your favorite variety—smoky, sweet, spicy, or tangy.
Consistency: If the finished dish seems too thick, stir in a small amount of chicken broth or water.
Food safety: Always verify that the thickest part of the chicken reaches 165°F (74°C).
Tips for the Best Chicken & Beans
Don’t lift the slow-cooker lid repeatedly while cooking; this allows heat to escape and can increase cooking time.
For especially tender chicken, avoid overcooking it once it has reached a safe temperature and is easily shredded.
For extra flavor, add a little smoked paprika, garlic powder, or freshly ground black pepper.
If you prefer a sweeter dish, use a sweet barbecue sauce; for more heat, choose a spicy sauce or add a pinch of chili flakes.
Leftovers make an excellent filling for wraps, sandwiches, baked potatoes, or rice bowls.
