Why Use Zest Instead of Juice?
The difference is important. Lemon juice is acidic, while baking soda is alkaline. When the two are mixed, they react quickly, producing the familiar fizzing effect.
With lemon zest, however, this acid-base reaction is avoided, allowing you to take advantage of the aromatic oils found in the outer part of the peel.
It is therefore a different approach from the classic mixture of lemon juice and baking soda.
