If your eggs have a green or gray ring around the yolk, it usually means they were overcooked. The ring forms when sulfur in the egg white reacts with iron in the yolk during high heat or long cooking times. It may look strange, but the eggs are still safe to eat. The green ring is most common in hard-boiled eggs that were cooked too long or cooled too slowly after boiling. To avoid it: Don’t overboil the eggs Remove them from hot water promptly Cool them quickly in ice water after cooking The texture may be slightly drier, but the eggs are not spoiled just because of the green ring.
